Prepare the chia “jam” the night before to allow the chia seeds to swell up. This will give the “jam” a nice consistency.
4 servings (pots) of Greek yoghurt
8 tablespoons of granola
4 kiwi fruit
Juice of 1 fresh orange
2 tablespoons chia seeds
1 teaspoon runny honey
Berries and/or flowers to garnish (optional)
Juice the orange, removing any seeds. Peel the kiwi fruit and place in a bowl with the orange juice and the honey. You can use a blender here to blitz the fruit. If you don’t have a blender you can use a hand blender, a fork or potato masher to purée or mash up the kiwi. Stir in the chia seeds, cover and refrigerate over-night.
The following day assemble the yoghurt pots. Divide the chia mixture in two then use half of the “jam” to coat the bottom of four glasses. Layer half of a pot of Greek yoghurt on top, then repeat the process.
Finish each glass with two tablespoons of granola and some fresh fruit or flowers.
