Tiger nuts are not actually nuts, they are tiny root vegetables. These tubers pack an incredible nutritional punch and are nut, gluten free and dairy free making them a great option for those with specific food allergies or intolerances. Carob is a powder made from dried, roasted carob tree pods and tastes a bit like a nutty cocoa powder. It is naturally sweet which means less added sugar or sweetener is needed when using this delicious super-food in recipes. Makes 2 smoothies
1 cup tiger nuts
2 ripe bananas
½ cup pitted dates
3 tablespoons carob powder
Soak tiger nuts and dates separately in water over-night. Drain tiger nuts then add to a blender with about 700ml water. Blitz on the blender’s highest setting for a few minutes, until smooth. Using a sieve or a nut milk bag drain the liquid from the nut pulp, reserving the milk to use in your smoothie in the next step.
Give the blender a quick rinse then add the drained dates, tiger nut milk and the remaining ingredients to the blender. You can add as much or as little vanilla paste and cinnamon as you like. Add a little at a time to suit your own taste. If you want a more chocolatey hit add more carob. For a sweeter smoothie add more dates or some honey.
