Stwnsh Rwdan is the Welsh name given to a mashed mix of boiled carrots and swede. My mum would often serve this with a roast dinner when I was a kid. It’s quite sweet making it a good contrast to any green vegetables you might serve with a roast and kids love it. Use equal amounts of carrot and swede to make your Stwnsh Rwdan
Ingredients
Swede
Carrots
Butter
Nutmeg
Chopped parsley
Sugar
Salt and lots of black pepper
Method
Peel the carrot and swede then cut into small pieces. Place in a pot and boil with a pinch of sugar and some salt. Cook until tender, drain the vegatbles then return to the pan and mash with a potato masher. The mash is best when you can see both colours and taste both vegetables so try not to make the mash too smooth. Add a knob or two of butter, chopped parsley, some grated nutmeg, salt and plenty of black pepper.
