Serves 6 as a side dish
Ingredients
1 cup quinoa
1 lemon, juice of
1 teaspoon mint sauce, from a jar
Chopped, fresh herbs: mint, parsley, dill, coriander (about a cup in total)
½ pomegranate, seeds of
½ Granny Smith apple, grated
½ red onion, finely sliced
A small handful of toasted, flaked almonds
White balsamic vinegar
Olive oil
Salt and pepper
Method
Boil the quinoa per the packet instructions (normally in boiling, salted water for 15 minutes or so). Drain, then rinse with cold water to cool the quinoa down. Place the quinoa in a large mixing bowl and once it has cooled add the remaining ingredients. Combine all of the ingredients, check the seasoning then transfer to a serving platter. Finish with a good glug of olive oil and top with some flaked almonds.
