Any excuse to eat rhubarb, I just love it. Putting these overnight oats together in the evening gives me something to look forward to and saves time in the morning. You can mix up the nuts and dried fruit to suit your taste and if you’re vegan, just swap out the kefir for dairy free milk and yoghurt.
1/3 cup oats
1/4 cup desiccated coconut
1/2 apple, grated
1/4 cup dried cranberries
12 whole almonds, roughly chopped
kefir (or milk and yoghurt) to cover the oat mix
rhubarb compote (click here for recipe)
In a bowl combine all the ingredients apart from the compote. Take a glass or a jar and layer alternate layers of oats and rhubarb. Cover and place in the fridge over night. Enjoy your ready made breakfast in the morning!
