The humble white cabbage is the star of the show here, it’s an amazing health food as it’s especially high in vitamins C and K, helps improve digestive health and combat inflammation. I learned recently that pomegranate seeds contain three times as many anti-oxidants as green tea which a great reason to add them to your diet. This twist on a classic slaw is easy to assemble and tastes great.
(serves 6-8 as a side dish)
½ head white cabbage
1 small granny smith apple, core removed
1 pomegranate (seeds of)
½ cup sultanas
½ cup chopped walnuts
30g chopped parsley
1 heaped teaspoon ground cumin
1 level teaspoon ground turmeric
1 level teaspoon sweet paprika
1 tablespoon pomegranate molasses
1/3 cup cider vinegar
Salt and pepper
Thinly slice the cabbage and apple using a mandolin or sharp knife then place in a large mixing bowl. Add the remaining ingredients with some salt and pepper to taste and a good glug of olive oil to dress the salad.
